As mentioned before, I really haven't got a light hand in the kitchen. But lately I have been making a special chocolate cake which uses whipped egg whites. At times it is almost sponge like and so I thought this might be the key to my success. This, as well as my Kitchen Aid. I googled 'fail proof sponge egg whites and came up with a suitable recipe.

I can now say that I can produce an acceptable sponge, not super light, maybe one day. I filled it with lemon curd (I had to use all of the egg yolks from the friands for something) and cream and 'iced' it with cream and fresh flowers.

It was all a lovely sight and such a perfect day.

It looks wonderful! I myself am a big fan of anything lemon-filled, and not having such a light hand in the kitchen myself{ although I do love to bake}~you have inspired me to give it a try. Cheers!

ReplyDeleteWhat a difference the Kitchen Aid makes to whipping up egg whites. I can't do sponges, but have made a delicious alternative using whipped egg whites. Yours sounds delish with the lemon curds!

ReplyDeleteLove an embroidered tablecloth and love a real sponge with real cream and the lemon would be delish! I think I have those blue and white plates too. It's fun playing 'ladies'.
ReplyDeleteOh I love this idea. I will wait until the children are all at school and do this mid week though. I would hate anything this pretty to be interrupted by small people. Your cake looks really light and delicious and I so love the fresh flowers on top.
ReplyDeleteoh yum! hubby wanted a sponge cake just like that for his birthday but with 1 week old babies I'm afraid it was a trip to michels for our first ever cake from there....now I feel back to normal and would love to try that one now I have my kitchen aid!!!!!
